In our house we eat a lot of chicken, very little pork (tenderloin and the odd chop) and pretty much no red meat (Steve enjoys a roast beef sandwich now and then). I guess you could call us Semi-Veggies ;)
Every now and then I like to make a vegetarian meal. Tonight we had a super yummy pasta dish. I sauted some garlic in some olive oil, threw in red onions, yellow peppers, zuchinni, aspagus, baby corn, mushrooms, grape tomatoes and salt and pepper. Meanwhile I boiled some rotini noodles. When the rotini was cooked I tossed it in the pan with the veggies and threw in some feta cheese. I served it with a side of garlic bread. DELICIOUS! The best part is you can use whatever veggies you want and whatever type of pasta you want. Easy peasy! Evan's favourites were the baby corn, aspagus and the feta!
